Peanut Butter-Cinnamon Pancakes

I absolutely love to celebrate anything that isn’t my birthday, so yesterday morning my roommates woke up to a ‘You Found An Apartment!’ Breakfast! Two nights ago two of my friends who are staying with us confirmed on an apartment in the city, an absolutely incredible accomplishment. They worked so hard for 5 weeks to find a home, and its absolutely lovely! They don’t even own a bed, but it’s beautiful none the less.

So to celebrate, I made pancakes and doused them in the incredible amount syrup I was recently given as a gift.
They were absolutely amazing!

1/2 cup soy milk
3/4 cup flour
1 tsp Vanilla
Cinnamon (to taste)
2 eggs (if only using egg whites, use 3 instead of 2)
Peanut Butter (to taste)

In a bowl, beat all of the ingredients together except the peanut butter. Pour a thin layer of batter onto your buttered pan. Immediately follow with small droplets (about a teaspoon size) on your pancakes, and drizzle some more batter over the peanut butter. If you choose not to cover the peanut butter, it will still work but your peanut butter will fry and get a little clumpy.
